Ocean Perch, Atlantic Sebastes marinus Red Perch, Deep Sea Perch, Rosefish, Redfish (New England-Eastern Canada) A popular sweet flavored, firm, delicate fleshed fish found from Labrador to the Gulf of Maine and off the German, Denmark, Iceland and Norway coasts in deep water. With a reddish or pink skin, the fillets from these small fish run from 8 ounces to a pound. with fish sizes ranging from 1/2 to 1 1/4 lbs. and about 11 inches in length. The three species of the Atlantic Perch are marketed interchangeably with the Sebastes marinus being the most important commercial variety. Packers sometimes brine Perch fillets in sodium tripolyphosphate to maintain moisture. This practice decreases quality, therefore care in purchasing and receiving must be taken. Fillets hold together better if the skin is left on so this practice is common in the sale of perch fillets.
Yield
The Atlantic Perch is a member of the Scorpaenidae or Scorpion Fish family. Even though the dorsal fin does not contain toxin in the concentration of the Scorpion fish if pricked on the hand it will cause a burning sensation and swelling. |
